I really wanted to title this post "Soccer Mom Approved" but I realized two things: A) I am not a mom and B) It probably wouldn't make much sense to you all any way! Because my style can seem a bit matronly at times, it's hard to not think that this is outfit hasn't been worn by a mom who ventures out to Saturday morning soccer games in the mid-Atlantic somewhere. Yet still, I feel very comfortable in my soccer mom outfit! :)
I just remembered that I wore this outfit traveling from Burbank, CA to San Diego last October! The southern California weather was absolutely perfect and this outfit was amazingly comfortable to travel in. I picked up these MIA 'Java' wedges from Nordstrom Rack while hanging out in downtown Boston a few weeks earlier. These wedges are the absolute most comfortable wedges I own! I could seriously wear them ALL. DAY. LONG.
The wedge isn't crazy tall and the material the sole is made from (maybe cork?) is super comfy. Plus, the elastic band towards the ankle makes for quick and easy slipping on and off! Plus, they're fairly lightweight. I own other wedges and it feels like I'm walking with cement blocks strapped to the bottom of my feet. Luckily these don't feel like that!

I grabbed this cotton tank from the clearance section at Target last Fall for less than $10 and it's served me well! It's got a little bit of detailing on the front and has that easy tunic shape I find flattering.

This is the first meal I've cooked in a few weeks and I was practically salivating while it was on the stove top! I paired my new favorite cut of meat, chicken thighs, with a black beans and stirred up a quick kale+quinoa salad to go along with it.
The prep time for this meal varies. I chose to marinate my chicken for three days in order to heighten the flavor! Cook time is about 75 minutes if pan broiling, but you can cook the chicken however you'd like. I steamed one cup of kale, one box of Near East Rosemary & Olive Oil quinoa, and warmed my (canned) black beans in the microwave for about 45 seconds before plating.
I decided to pan broil my four chicken thighs instead of broiling them in the oven. Simply add a bit of olive oil to a skillet on medium to high heat. Place your chicken in and let cook for about 10 minutes uncovered. After 10 minutes, I turned them over, covered with a top and let cook/simmer for 30 minutes, turning every 15 minutes. All in all, I let my chicken cook for about 60-75 minutes, covered on medium heat. Cook quinoa according to instruction and steam kale for about 10 minutes max on low to medium heat.
To make the salad, simply toss the steamed kale in a bowl with a bit of olive oil, crushed red pepper (for a little heat-- but it's totally optional) and about 3/4 cup of quinoa. Mix together well. This should be more than enough for a single serving during dinner!
This recipe, like most that I throw together, is fairly simple and open to your own interpretation! Cook your chicken however you'd like, add extra veggies to the salad, and choose whatever other side you'd like. Enjoy!

You all know how much I love my green smoothies, but it does take some time to make them from scratch if I don't prep for it. About a month ago I found Jamba Juice Smoothie kits in the freezer section of my local grocery store and have been using them when I don't have time to whip up a smoothie from scratch! They're really tasty and I'm so happy I found a good alternative to help me out when I'm in a pinch. Check them out for yourselves!
What I'm Reading
Since taking a little time to detox from social media (that's why I haven't posted much on Instagram or Snapchat) I've found that all the time I used to scroll through my feeds and watch snaps was waaaay too much. Instead of having my eyes glued to my phone, I've opted for good old fashion books instead! The books above are all faith based and are such a refreshing breath of air. They help put things in perspective and provide great examples of the amazing love & goodness of God!
What I'm Watching
Two of my favorite shows are back with new episodes!!!! Breakout Netflix hit Unbreakable Kimmy Schmidt is HILARIOUS! If you want just a peek of one of the show, please amuse yourself with this video. And not be outdone by Kimmy and Titus Andromedon, my girl Mindy Kaling is back with her show The Mindy Project over on Hulu! I binge watched all four seasons (twice) when I had a month free with Hulu, so waiting for the show to return felt like the longest wait ever! Yes, the photo above is of a Chipotle burrito. This my dear friends is the first Chipotle burrito I've had in months. And to be honest, it's all because of the good Man upstairs. As most of you know, I've been in a dry season for some time now, but this week was by far the best week I've had in a very long time!
I started the week with an awesome church service. You can watch it here. Monday morning I got an email in regards to a new job opportunity and Tuesday afternoon all my accounts balanced out, allowing me to grab my chicken burrito with exact change! Come Wednesday,I finalized some major details for a few new projects I'm working on, Thursday afternoon I had an awesome job interview, and today a new blog I created with a good friend of mine went live!
All in all, this week really showed me that The Lord works everything together for good. (Romans 8:28). I've listened to a few podcasts this week that really resonated with me and struggling. Sometime God will bring you pain, hardships, and struggle just to bring you closer to Him. He doesn't hurt us because He's mean. He doesn't hurt us because He gets a kick out of it. Like the quote says, "You never know God is all you need, until God is all you have".
Struggle is real, there's no doubt about that. How we choose to handle the struggle is how we get through it! Instead of sulking about and magnifying the problem, why not give it to God? Take all your troubles and trials, lay them at the feet of The Lord, and watch Him handle it.
So, with all of that said, I hope and pray you all will have an amazing week like I recently had very soon! Remember, to always #celebratethesmallwins!
Sometimes you just need to live life. Bask in the sunshine, dance around to the music, let the wind blow your hair. And don't forget to add a pop of color! I rarely ever wear crop tops, but this one was too cute to pass up. I originally had planned to wear it with a pink skirt for Easter Sunday, but opted for something a little simpler.
When I shot this look, it was absolutely GORGEOUS outside! Sun shining bright, slight breeze, and not a single cloud in the sky.
The best thing about this top is that it's so versatile. You can easily pair it with jeans, skirts, or shorts. From white like I'm wearing, to a neon pink skirt, you'll look fun and fresh! Not to mention, your shoe options are pretty much endless with this top! You can't go wrong with a nude chunky heeled sandal or a black flat. Either way, you're good to go!

Although my small group met for the last time last week, luckily I've found some new books to fill the void!
