A little well-known fact about me? I'm a Mexican food fiend! I'm talking chips & salsa, margaritas on the rocks (no salt), chicken tacos, black beans, Mexican rice, quesadillas and my beloved queso blanco.
I. LOVE. MEXICAN. FOOD.
Maybe it's just my imagination, but I like to believe I have at least one Mexican blood relative in my family. I tear through Mexican cuisine far easier than most. But a diet of queso, corn tortillas, and chicken probably isn't the healthiest or cheapest. $7.12 gets me a single burrito at Chipotle and that could easily add up to $20+ if could eat there as often as I'd like, you feel me?
So today I decided to try my hand at making my own Mexican treat-- homemade chips & salsa.
I found my salsa recipe -- like all my other recipes-- through Pinterest! It only requires a handful of ingredients and you may even have a few on hand in your fridge or cabinets.
Now, I know I could've just bought a jar of salsa from the grocery store but I actually don't care for jarred salsa. I'm more of a restaurant style salsa girl. And I mean from the Mexican restaurants...not the "restaurant style" in the jar! Jar salsas are always too chunky, too watery, and hardly flavorful in my opinion. So why not whip up my own?
My version of this recipe simply calls for five ingredients -- fresh cilantro, one white onion, a few jalapeño peppers, garlic, and whole peeled plum tomatoes.
Simply chop up your fresh vegetables, throw them in the blender with your tomatoes (+ the juice from the can) and whip it together! The great thing about making your own salsa at home is determining how hot or mild you want it. I only added two peppers to mine but I definitely could have added a third.
I used the puree setting on my blender because I love my salsa with a smooth texture.
I also decided to whip up some fresh baked tortilla chips to accompany my fresh salsa! Grab a pack of corn tortillas, brush a bit of vegetable oil on both sides of 8-10 tortillas, stack them up and cut into six pieces.
Place them on an un-greased cookie sheet, sprinkle with salt, and bake at 350 degrees for 15 minutes (be sure to flip over around the 7th minute!). Pop those chips out of the oven, squeeze a little bit of lime juice on them and get to salsa dipping! Enjoy!
