A true Southern delicacy. Red Velvet Cake. For the past 3 years, this cake has always had a leg up on me. But not anymore. Oh no. I have successfully baked a near perfect red velvet cake. Victory has never tasted so good.
There are so many red velvet cake recipes out there. Some are oil and egg based while others call for a nice helping of buttermilk and sugar. Some have a distinct chocolatey flavor while others not so much. And let's not forget the wide array of 'red' coloring they all seem to have. From a deep maroon all the way to a fading red, this cake has stood the test of time.
I remember making my first batch of red velvet cupcakes about a year or so ago. Back then, I thought I was really doing something by making red velvet cupcakes. Little did I know, not so much. They either came out too chocolatey, too dense, or too pale. Then I tried another family recipe I came across and they were so light, they could barely stand. And then finally, I found it. Well, a version of it. Blue velvet to be exact. The blue velvet recipe just seemed right. It had just enough of each ingredient to really give it that perfect velvety texture and color. And by perfect, I mean 2 cups of sugar, 1 cup of buttermilk, and 2 (yes two) sticks of salted butter. Sounds like the perfect (insert your choice of color) velvet cake to me.
So I altered the blue velvet cake recipe by simply changing the food coloring from blue to red. I finished the cake off by giving it a few layers of homemade cream cheese buttercream frosting. Check out photos and the recipe below!
